Summary of Position:

The Kitchen Manager at The Fifth Local Eatery and Alehouse will work in a fast-paced environment with a food-first concept. The Fifth has a passion for providing fresh, quality recipes to our clients without exception. The Kitchen Manager is expected to provide exceptional service with a strong attention to detail. The Kitchen Manager takes on the responsibility of the back of the house in directing and managing cooks and other kitchen workers. The Fifth has a culture of mutual accountability and transparency where communication is key to making each working day successful. We are looking for candidates with strong leadership skills, integrity, self-accountability, excellent communication and management skills, attention to detail, and who thrive in a fast-paced environment. The Kitchen Manager assumes all the duties of the back of the house and works side by side with the General Management and Ownership to insure the kitchen is always operating at its full potential.

Duties & Responsibilities:

  • Ensure that all food preparation and products are consistently prepared and served according to The Fifth recipes, portioning, cooking and serving standards.
  • Order food products according to predetermined product specifications.
  • Manage BOH staff to unsure standards and quality of food are being followed by each staff member.
  • Assist Management and Ownership in menu development which include standardizing recipes, execution of recipe and insuring all food items meet these standards
  • Aid in controlling food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points.
  • Assist in day-to-day kitchen maintenance including, but not limited to, maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection.
  • Be knowledgeable of The Fifth policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
  • Manage the BOH schedule and insure all BOH employees are in place and ready to work.
  • Executing training of new kitchen personnel in safe operation of all kitchen equipment and utensils.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices.

Qualifications:

  • A minimum of 2 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter
  • Strong leadership skills
  • Possess strong organizational and decision-making skills
  • Work well in fast-paced setting
  • At least six (6) months experience in a similar capacity
  • Must be able to communicate clearly and effectively
  • Be able to reach, bend, stoop and frequently lift up to 50 pounds
  • Be able to work in a standing position for long periods of time
  • Must have exceptional hygiene and grooming habits
  • PA Driver’s License required
