Assists the Director of Dining Services by directing and coordinating food service activities of the senior living community. In conjunction with the Director, the Assistant Director will supervise, and coordinate activities of kitchen associates engaged in purchasing and preparing food and supplies. This position helps oversee the overall resident dining experience in our senior living community.

**This position requires strong culinary and back of house skills with front of house skills also being utilized.

** This position is in a large, air conditioned, clean and team driven kitchen.

Supervisory Responsibilities

This position helps support supervision of entire dining staff.

JOB DETAILS

  • Ensure resident satisfaction and overall dining experience (service standards, dining room appearance, etc)
  • Help prepare menus for residents as needed
  • Help with purchasing as needed
  • Help with overseeing the BOH and FOH.
  • Guide new associates through training.
  • Handle any questions or concerns from residents and staff.
  • Helps with taste, smell, and appearance of food to ensure conformance with recipes and appearance standards.
  • Assures all open food in refrigerators and freezers are covered and dated and that outdated food is discarded promptly.
  • Assures all associates follow proper hand-washing and personal hygiene techniques.
  • Assures all logs (food temperature, refrigerator/freezer, cleaning) are properly completed daily

Day To Day Essentials:

  • Meets Standards established for the Dining Services Department. Becomes completely familiar with the state health regulations governing Dining Services, ensures compliance in department by regularly reviewing health regulations checklist. ensures that menus conform with nutritional standards and internal procedures by following those menus provided.
  • Inspects food and food preparation and storage areas to assure all areas are clean, sanitary, and meet sanitation and health regulation guidelines. Assure all open food in refrigerators and freezers are covered and dated and that outdated food is discarded promptly.
  • Tastes, smells, and observes food to ensure conformance with recipes and appearance standards. Measure’s satisfaction levels among residents daily at each meal by walk- thru and conversations with residents as well as Resident Satisfaction Survey results.
  • In absence of the Director, or in conjunction with, orders and schedules delivery of food and supplies from vendors to assure adequate amount of food and supplies to fulfill weekly menus.
  • Oversees and coordinates work of cooks and other kitchen associates engaged in preparing meals to ensure adherence to recipes and quality standards. Provides cooking coverage during week to cover kitchen schedule.
  • Professionally trains all associates on the use of any dangerous equipment in the kitchen such as a meat slicer, blender, oven, stove, fryer, steam table, knives, and so forth. Documents all training in the associate record.
  • Demonstrates an understanding of compliance and ethics program policies and procedures.
  • Completes all mandatory training as required.
  • Maintains appropriate degree of confidentiality.

The associate is required to stand, use hands, and reach with hands, and climb or balance. The associate must frequently lift and/or move up to 25 pounds and occasionally lift and/or move more than 100 pounds. Good vision is also required.

Minimum Qualifications:

  • Prior hospitality experience
  • Must be able to pass a background check.
