Job Overview: Responsible for the overall operations of the kitchen. Required to manage staff, purchase food and stock, and make sure everyone is trained on proper food preparation and kitchen safety techniques.

Job Description:
  • Set up commercial kitchen preseason to accommodate preparation and packaging of meals for as many as 200 people per day or more.
  • Meals range from riverside/cooler packed lunches to breakfast/lunch/dinner on overnight trips as well as all meals served at the outpost and items to be put in hot/cold cases for retail sale.
  • Assure all state and local licensing for kitchen/f&b is up to date.
  • Establish a portion control system to balance guest satisfaction and cost effectiveness.
  • Forecast food purchases according to upcoming schedule of full day, overnight and custom river trips.
  • Make trips to store to buy any additional food as necessary, or arrange with Operations Manager for hourly labor staff to do so
  • Place food orders weekly to guarantee freshness, proper stock for every trip and waste prevention.
  • Prepare chicken fajita lunches daily for full day trips and have them packaged for river travel at time of guide call on said trip, same for overnight trips.
  • Receive used coolers as trips return for unpacking and cleaning.
  • Maintain storage system—usable by both guides and f&b staff—to keep gear (specifically coolers) in good working condition.
  • Design menu with River Supervisor, buy and pack for 2 to 6 day river trips as they arise.
  • Design custom menus for large groups as well as supervise the transport and serving of group meals at north property.
  • Maintain quality and health standards while working to meet budgeted financial goals and monitoring performance in relation to goals.
  • Receive orders from Operations to prepare breakfast and lunch items both preordered and for sale at the outpost
  • Work positively and effectively as part of a team environment
