JOB SUMMARY

The Homestead Resort & Golf Club is undergoing a complete renovation as well as adding several new food & beverage outlets. Our most recent addition is the new pool and golf grill, \1886\, with a major component of smoked meats and wood fired pizza. The grill includes a new Smoke Master 250RFS BBQ Pit, which holds 600 lbs of brisket, pork butts, tri-tips, chicken, sausage, etc. We are searching for an experienced Pitmaster. The Smoker / Pit Master is responsible for preparing smoked meats, seasonings, sauces and side dishes per guidelines to ensure quality and freshness of all products to the satisfaction of the Executive Chef.

Duties, Responsibilities, Requirements

  • Very early morning keyholder position. Position requires reliability and timeliness.
  • Knowledge of raw meat handling guidelines.
  • Ability to build and maintaining fires.
  • Ability to follow direction, accept constructive criticism, follow recipes, and operate without constant supervision following a lengthy training period
  • Flexibility and ability to adapt to changing needs of restaurant daily.
  • Organizational skills are a must. BBQ smoker will be utilizing multiple smokers, multiple protein types, time constraints, etc.
  • Attention to detail and quality control are keys to being successful at this this position.
  • Loading, unloading smokers, coolers and dry storage. Checking in orders, packaging product, and assisting with catering needs.
  • Understand health, safety, and sanitation regulations.

  • Be a clear thinker, remain calm and resolve problems using good judgment.

  • Work in a fast paced, intense work environment, under sometimes extreme heat and stress.

The resort includes a golf course, 127 guest rooms and suites, and a crater that is 65 feet deep and naturally filled with mineral water that continuously flows at 96 degrees year round.
