Purpose of Position

The primary purpose of this position is to manage the inventory control for Dining Services, which includes ordering the departments groceries and supplies, managing the receiving process, inventory control and product rotation, and food management program maintenance. This position will provide direction to food production staff to maximize use of inventory. The position will assist in managing daily food production, operations and provided leadership to all production staff in the Residential Dining Center as scheduled or assigned.

Duties & Responsibilities

  • Responsible for the accuracy of weekly inventory process and forecasting for Residential Unit
  • Identifies and assist providing levels of excess inventory to be used for service with production staff
  • Collaborates with Production Staff Managers with inventory substitutions and Inventory concerns
  • Coordinates with Production Managers to ensure proper amounts of inventory is being used to control food costs and control inventory excess and shrinkable goods affecting purchasing inventory levels.
  • Ensure accuracy of service records
  • Responsible for residential catering events inventory needs and associated billing for such events
  • Ensure FIFO process is followed for all perishable inventory and all dated receivable inventory
  • Coordinate all duties related to the utility handler’s position for the receivable of all products for use in Dining Center
  • Assist/ with recommendations of products for menu changes within Food Pro to maximize inventory cost controls.
  • Updates Menu’s acceptability factors including, ACI Menu to ensure forecasting accuracy
  • Assist in FoodPro management duties as assigned by FoodPro System Manager
  • Other Duties as assigned in Dining Center
  • Use FoodPro to assemble the food purchasing needs for Dining Services from all approved Vendors
  • Leads and maintains the purchasing needs for the Wilkerson Dining Center and other units as assigned
  • Confirm product by checking the receiving cases against the invoices or reference reports
  • Correct any discrepancies prior to signing/invoicing of any purchase order

Minimum Requirements

  • Associates Degree or three years of previous food service management experience in lieu of degree
  • Three years of food service inventory acquisition experience
  • Four years previous food service management experience in lieu of degree
  • Two years supervisory experience
  • Computer skills sufficient to utilize basic software programs (i.e. Word, Excel, Outlook)
  • Successful completion of Criminal History Records Check

Preferred Qualifications

  • Experience using a Food Management system preferred
  • Experience with pallet jacks and electric forklifts
  • Previous food service warehouse management experience
  • ServSafe Certification preferred
