JOB SUMMARY: As the F&B Inventory Control, you will be responsible for organizing, controlling and maintaining all foods, related products, and storage areas in the kitchen. You will assure quality products are available and accessible to meet the demands of the Casino and communicate with management and staff about all matters of food storage, handling, and control.

QUALIFICATIONS: Native American preference. High School Diploma or equivalent preferred. Knowledge of the culinary profession and problems relevant to the management of inventory control preferred. Knowledge of cost control, food cost, menu planning, weights, and measures and proper stock rotation preferred. Five (5) years’ experience in kitchen and receiving procedures preferred. Must exhibit leadership skills and be able to direct kitchen personnel to attain effective results. Knowledge of food service sanitation requirements. Must be certified according to the guidelines of the State of Wisconsin.

PHYSICAL, MENTAL, AND ENVIRONMENTAL DEMANDS: Must be able to lift up to 50 pounds. Must be able to withstand temperature extremes in working environment. Must be able to work around standard chemicals and compounds common within the food service industry.

ESSENTIAL JOB FUNCTIONS: Maintain quality control at receiving. Assure daily inventories are taken and accurate. Maintain proper levels on all stock items. Fulfill all kitchen requisitions for proper quantities and to control waste. Ensure sanitation procedures are followed, including proper storage temperatures. Maintain order in all stock locations. Meet with vendor representatives to ensure quality of items and resolve any delivery problems. Advise kitchen management of any product shortages that may affect operations.

Must be able to meet the attendance guidelines of the position, adhere to and enforce all departmental and company policies, and attend all mandatory training. Must comply with and enforce all safety policies and rules.
