WATKINS GLEN HARBOR HOTEL

Position: Experienced AM & PM Line Cook
JOB OVERVIEW

Works directly with and in the absence of the Executive Chef to maintain and improve culinary operations through supervision, coordination, and participation in activities of cooks and other kitchen personnel engaged in preparing and cooking foods in the hotel, restaurant, or other business operations. Prepare food items in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

REPORTS TO: Executive Chef

ESSENTIAL JOB FUNCTIONS

Include the following; however, other duties may be assigned.
1. Accurately and efficiently, cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking. Also, perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items.

2. Prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and a variety of other kitchen equipment.

3. Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

4. Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.

5. Portions food products prior to cooking according to standard portion sizes and recipe specifications.

6. Maintains a clean and sanitary workstation area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration.

7. Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning battering, breading, seasoning, and/or marinating.

8. Follows proper plate presentation and garnish set up for all dishes.

9. Handles stores and rotates all products properly.

10. Assists in food prep assignments during off-peak periods as needed.

11. Closes the kitchen properly and follows the closing checklist for kitchen stations; or assists others in closing kitchen procedures.

12. Attends all scheduled employee meetings and brings suggestions for improvement.

13. Responsible for kitchen cleanliness and cleaning duties that may include dishes, workstation sanitation, kitchen floors, appliances, refrigerators, and freezers.

14. Perform any other job related duties as assigned.

Ensure adherence to quality expectation and standards. Stand, sit, or walk for an extended period of time or for an entire work shift. Reach overhead and below the knees including bending, twisting, pulling, and stooping. Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
