This position is responsible for coordinating the activities of chefs, cooks, and other kitchen workers engaged in preparing and cooking foods to ensure an efficient and profitable food service. The Executive Chef is responsible for directing and administering the planning, preparation, production and control of all culinary operations in the hotel's continuing effort to deliver outstanding guest service and financial profitability.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Essential Duties:

1. Direct and oversee all culinary operations, to include, but not limited to, production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability

2. Interact with guests and clients to monitor and assess satisfaction trends, evaluate and address issues and make improvements accordingly

3. Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes, and recent menus Job Duties and Responsibilities:  Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies  Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items  Create and implement new menus and individual menu items for outlets based on current food trends and regional tastes in partnership with Director of Food and Beverage  Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards  Perform general management duties including, but not limited to, systems management, budget and forecasting, report generation, department management and meeting participation and facilitation  Develop and implement guidelines and control procedures for purchasing and receiving areas, manage department controllable expenses including food cost, supplies, uniforms, and equipment Vesta Hospitality, LLC – Effective January 2017 2  Work closely with vendors to obtain the highest quality offerings at the most reasonable price  Work in support of team goals and measure effectiveness through the Food & Beverage profit and service performance of the hotel. Ensure that all goals are geared toward exceeding guest’s expectations. Participate in long range planning  Control the elements that determine profit and loss. Responsible for all major kitchen/restaurant operating expenses. Set margins and manage the business against projections

SUPERVISORY RESPONSIBILITIES

This position directly oversees and supervises all positions of the department. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Supervisory responsibilities include, but are not limited to performing the following duties: hiring, assigning work, orientation, training and development, evaluating performance, elevating compensation, rewarding performance, mentoring, approving time off and scheduling, resolving complaints, disciplinary action and associate separations, effective staffing procedures, awareness of and response to associate morale problems, and supervising workload during shifts.

EDUCATION AND/OR EXPERIENCE

Education and/or Experience: Associate's degree (A. A.) or equivalent from two-year college or technical school; or two to three years related experience and/or training; or equivalent combination of education and experience. Language Skills: Must be able to read, write and speak English. Must be able to read and interpret simple and complex documents, reports, manuals and correspondence. Must be able to write simple and complex documents, reports, and correspondence. Must be able to speak effectively with clear speech to individuals and groups. Mathematical Skills: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs. Computer Skills: Job requires specialized computer skills. Must be adept at using various applications including database, spreadsheet, report writing, project management, graphics, word processing, presentation creation/editing, communicate by e-mail and use scheduling software. Reasoning Ability: Must be able to apply common-sense logic and understanding to carry out instructions provided in written and/or oral form. Must have the ability to solve problems involving several variables in given situations and interpret a variety of instructions provided in written and/or oral form. Must be able to demonstrate effective interpersonal skills, sound judgment and decision-making.
