Job Summary:

The Banquet Bartender is responsible for checking and executing Banquet Event Order instructions for setting up and dismantling portable banquet bars or bar areas for events, taking orders, mixing traditional and creative alcoholic and non-alcoholic drinks, and serving drink orders to the guests at the events. The position requires being knowledgeable on mixology, Dunraven’s event menu, food and drinks included, taking payments, communicating the orders, helping with guest service, strong team player, and adhering to health, safety and sanitary practices; and being able to enforce the Alcohol policy, Dunraven’s established policy, local and state law.

Education and Experience:

  • Must have alcohol awareness certification such as TIPS, as required by local or state government agencies.
  • Completion of mixology, barkeeping, or other related training required.
  • At least two years of proven and related experience is preferred.

Physical Requirements:

  • Flexible with schedule, and long hours sometimes required, including working morning, afternoon, nights, holidays, and weekend shifts.
  • Ability to be on your feet throughout the entire shift: prolonged periods of standing, bending, stooping, twisting, and walking, including up and down the staircases.
  • Prepare drinks, including repetitive hand and wrist motion.
  • Lifting, carrying, pushing, pulling or otherwise moving objects, products, and supplies up to 30 pounds.
  • Must be at least 21 years of age.

Essential Duties/Responsibilities:

  • Follow and execute instructions by the Banquet Captain or the Wedding and Event Coordinator according to event agendas, bar types and setup, and timeline.
  • Assist Banquet Captain in event setup, dismantling, and cleaning of portable banquet bars.
  • Understand and know event floor plans, including the timeline and agendas.
  • Have knowledge of mixology for traditional and creative cocktails.
  • Have knowledge of unique and complementary flavor pairings.
  • Maintain complete knowledge of all wine, liquor, beers, and non-alcoholic selections available at Dunraven, including characteristics and description to be able to promote, respond to questions, and upsell when appropriate.
  • Check customers’ IDs to ensure they meet the minimum age requirements for consumption of alcoholic beverages.
  • Maintain complete knowledge and strictly abide by local and state liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk driving.
  • Be able to open, pour and serve any type of wine/champagne bottle.
  • Engage in a friendly and appropriate manner with guests, and maintain positive guest relations.
  • Anticipate guests’ needs, respond promptly, and acknowledge all guests even when busy.
  • Interact with guests, including serving the head tables, VIP tables, all guests, and supplying the guests with requests in a timely manner.
  • Load and transport dishes into the dish room, and run food as needed.
  • Monitor and maintain cleanliness, including proper sanitization of the portable bar or bar areas, including sweep and mop areas around tables for any food, silverware, or napkins.
  • Communicate with the Banquet Captain as well as other banquet staff when inquiries or issues arise.
  • Adhere to all payment procedures established, including collection and processing cash, credit card, gift card and room service.
  • Take inventory, stock the bar and floor coolers, replace kegs and CO2, and inform the manager when inventory is low as well as keeping the POS and 86 board updated on all shortages.
  • Operates efficiently on the restaurant's two-way radio transceiver.
  • Clean up and complete post event or closeout tasks, including transporting all event items to dish room or storage room, food storage, vacuuming, mopping of the areas, and resetting for the following event.
  • Assist with banquet and events inventory.
  • Keeps Banquet Captain or Wedding and Event Coordinator promptly and fully informed of all issues, and takes prompt corrective action recommended by Manager on Duty.
  • Perform and complete banquet bar’s opening, closing, and side work in a timely manner, including cleaning and prepping of the event areas. All banquet staff are responsible for the state in which they leave Dunraven.
  • Attend scheduled pre, and post event briefings by Dunraven.
  • Attend any scheduled training, complete any quizzes or homework assigned by the manager.
  • Adhere to the health, safety, and sanitary practices for food handling, and general cleanliness at all times.
  • Adhere to company policies and procedures at all times.

Other Duties:

  • Assist banquet staff team in setup and prepare beverage stations, including bar, coffee, and non-alcoholic stations.
  • Assist banquet staff team in setup and prepare buffet food and beverage line, bus station, and dessert table.
  • Ensure tables are always cleared of used or unwanted plates, utensils, and drinkware, and take them from the dining tables to the kitchen to be washed. This is also known as “pre-bussing” or “table maintenance.”
  • Serve alcoholic drinks, water, and replenish water glasses throughout the event, including coffee and hot tea offering.
  • Able to operate efficiently on the restaurant's two-way radio transceiver.
  • Perform all other duties and responsibilities assigned at the discretion of management.
