Job Summary:

Responsible for the production and presentation of all standing orders for the Food & Beverage outlets to include, but not limited to, various cakes, pies, cookies, breads, and pastries. Maintains high quality of food preparations and production.

Qualifications:

  • Minimum of 2 years of experience in high volume retail or hotel bakery.
  • Knowledge of general baking principles
  • Ability to work under pressure while maintaining quality and accuracy.
  • Willingness to learn and take initiative.
  • Strong time management and efficiency skills.
  • Interpersonal, customer service, communication, team building, and problem-solving skills are required.
  • Ability to work unsupervised and independently
  • Works a reasonable amount of overtime when required.
  • Ability to know and/or learn computer skills: Windows, Word, Excel and Stratton Warren.

Essential Job Functions:

  • Ensures that safe and appropriate procedures are used when receiving, storing, preparing, holding, cooking, and serving food.
  • Uses HACCP sanitation guidelines and procedures by maintaining cleanliness in and around the kitchen areas, including all equipment.
  • Reports any problems to the Executive Chef, Room Chef and/or Sous Chef.
  • Fills racks for transportation and storage.
  • Prepares pans for the baking process.
  • Loads and empties ovens.
  • Prepare items according to recipe standards and specifications.
  • Inspects and tastes prepared foods to ensure excellent quality and presentation.
  • Communicates how much product is need for business and event needs.
  • Prepares proper amounts of back-up product, properly stored and labeled.
  • Assist with creating par levels and notifies supervisor when stock runs low.
  • Ensures production runs smoothly, effectively, and accurately.
  • Prepares pastries, dough, bread, cakes, cookies, danish, desserts, muffins, and pies for all outlets.
  • All team members will follow the Everyone Greets Everyone (EGE) policy. It is the expectation that every team member, front or back of house, should proactively seek out opportunities to greet guests and their fellow team members daily. EGE policy states team members should: acknowledge guests and fellow team members within 10 feet; initiate friendly verbal greeting within 5 feet; keep your head up, look around (“head on a swivel”); look for opportunities to greet guests and others; please remember that when you are on the floor, you are “on stage”. • Team members will participate in all mandatory meetings and pre-shift BUZZ sessions. • Must be able to get along with co-workers and work as a team. • Ability to read, write, speak and understand English. • Must be able to respond to visual and aural ques. • Must present a well-groomed, professional appearance. • Meets the attendance guidelines of the job and complies with all state, federal and regulatory policies and procedures. • Must be able to work a varied schedule including holidays, nights and weekends as needed.
  • Perform other duties as assigned

Physical, Mental & Environmental Demands:

  • Literate and fluent in English.
  • Must be able to tolerate areas with high, humid temperatures in excess of 115 degrees.
  • Must be able to tolerate chemicals for cleaning and sanitizing kitchen areas.
  • Must be able to work and maneuver in a close or small kitchen / working environment during entire shift.
  • Must be able to lift, push & pull up to 75 pounds.
  • Must be able to reach, bend, twist, stoop, and stack.
  • Must be able to use proper team lifting and carrying techniques.
  • Must be able to work at a fast pace and in stressful situations.
  • Must be willing to work long hours and any shift.
  • Visual range must include immediate area.
  • Ability to pass the Indian Health Service Exam.
  • Ability to stand and walk for 8 hours.
  • Ability to read and interpret formulas; calculate quality conversions; understand product directions.
  • Must be able to bend, stoop, reach, crouch, carry, pull, and stack oven racks, mixes, oven sheets, and other baking utensils within the kitchen.
